Apple and Cinnamon Muffins

Key Ingredients
  • 750ml cake flour
  • 3ml salt
  • 15ml baking powder
  • 5ml cinnamon
  • 250ml Jungle Oats
  • 200ml brown sugar
  • 2 eggs
  • 100ml oil
  • 400ml milk
  • 3 apples, peeled and diced
Method
  1. Preheat the oven to 180°C.
  2. Grease 2 muffin pans.
  3. Sift dry ingredients. Add Jungle Oats and sugar.
  4. Beat eggs, oil and milk together. Mix lightly with dry ingredients and add apple. Do not over-mix.
  5. Spoon mixture into muffin cups to about 3/4 full.
  6. Bake for 25 minutes or until done.
  7. Once cooled, dust with cinnamon sugar.
