Jungle Mixed Berries Muesli Cookies

These extremely tasty, crispy, chewy, moreish cookies are made with healthy Jungle Mixed Berries Muesli and finely ground Jungle Oats.  No wheat flour is used in this recipe and it is bound to become your favourite cookie of all time.  Truly a gift of a cookie!
  • 100g butter, room temperature
  • 125ml (½ cup) sugar
  • 1 egg
  • 2.5ml (½ tsp) vanilla essence
  • 200g (1½ cups) Jungle Mixed Berries Muesli
  • 100g (1 cup) *Oat Flour 
  • 2.5ml (½tsp) baking powder
  • Parchment paper (non stick baking paper)
 
  1. Oven on 175°C.
  2. In a large bowl, beat the butter and the sugar together until well blended.
  3. Add the egg and the vanilla essence and beat well.
  4. Add 1½ cups Jungle Mixed Berries Muesli and the cup of oat flour and mix together or beat well.
  5. Cover two large baking trays with parchment paper (non stick baking paper).  This step is essential so that you can remove your cookies without losing a crumb.
  6. Scoop a heaped tablespoon of muesli cookie dough and shape into a flat circle (not too flat as it will spread by itself).  
  7. Continue shaping all the cookies and place them at least 5 to 6cm apart as they spread when they bake.
  8. Bake for 13 to 15 minutes until slightly golden on the edges.
  9. Remove from the oven and allow to firm up for a few minutes before removing carefully with an egg lifter.  
  10. Place the cookies on a wire cooling rack to cool.  
*Place about 1 to 2 cups of Jungle Oats in a smoothie maker/coffee grinder/food processor and ground until it resembles fine flour.  This recipe uses 1 cup oat flour.  Store the balanced oat flour in a jar in the fridge.
