Do Life With Heart
- 100g butter, room temperature
- 125ml (½ cup) sugar
- 1 egg
- 2.5ml (½ tsp) vanilla essence
- 200g (1½ cups) Jungle Mixed Berries Muesli
- 100g (1 cup) *Oat Flour
- 2.5ml (½tsp) baking powder
- Parchment paper (non stick baking paper)
- Oven on 175°C.
- In a large bowl, beat the butter and the sugar together until well blended.
- Add the egg and the vanilla essence and beat well.
- Add 1½ cups Jungle Mixed Berries Muesli and the cup of oat flour and mix together or beat well.
- Cover two large baking trays with parchment paper (non stick baking paper). This step is essential so that you can remove your cookies without losing a crumb.
- Scoop a heaped tablespoon of muesli cookie dough and shape into a flat circle (not too flat as it will spread by itself).
- Continue shaping all the cookies and place them at least 5 to 6cm apart as they spread when they bake.
- Bake for 13 to 15 minutes until slightly golden on the edges.
- Remove from the oven and allow to firm up for a few minutes before removing carefully with an egg lifter.
- Place the cookies on a wire cooling rack to cool.
*Place about 1 to 2 cups of Jungle Oats in a smoothie maker/coffee grinder/food processor and ground until it resembles fine flour. This recipe uses 1 cup oat flour. Store the balanced oat flour in a jar in the fridge.
